Since I still don't actually know the grammatically correct position for sure and as the forum loves a poll...
The U's - grammatically incorrect apparently, because you don't use an apostrophe to make a plural. The Us - grammatically correct but has the potential to cause Middle Eastern countries concern that we're going to invade for oil.

I think the officially grammatically correct one is Us - because it's a plural.
But it looks weird, like the word 'us'.
So I guess the apostrophe is acting like a divider to make it clear that it's the 'yoos', and not the 'us'.

The apostrophe could denote possession, so if the U's/ Us is short for United's football team (or fans), for example, the apostrophe is correct. It could also be replacing the 'nited' part of 'United' in the same way an apostrophe replaces the letter 'a' in 'they are' to make they're. Users of 'their' for this purpose please take note.

It is grammatically acceptable (among all but the most extreme pedants) for an apostrophe to be added to an an acronym or initialism where it aids clarity, even where this breaks the usual rules for apostrophe usage. Given the potential confusion with ‘Us’ (first person plural) I think U’s is legitimate.
